Sweeeeet Potato Wedges

The yummiest side to any dish & also fabulous cold...


1 large sweet potato

1 tsp Cajun spice

Vegetable oil




Chop both ends off the sweet potato and then slice it into wedge shapes.

Place all the chopped potato into a Tupperware container and pour roughly 100ml of water into the bottom of the Tupperware. Pour 1tbsp of vegetable oil over the potatoes.

Heat in the microwave for 5-7 minutes so that the potatoes become soft.

Then place on a baking tray. Sprinkle with cajun spice, salt and pepper. Coat well in vegetable oil.

Bake in the oven for 20 minutes/until they are nice & crispy on the outside.

If you like them extra sweet, drizzle some honey over 5 minutes before they have finished cooking.
