
Lemon Baked Salmon
Perfect for a quick and easy bit of brain power.

Ingredients:
1 x Salmon Fillet
1 x Lemon
Salt/pepper
20g butter
Tin foil
Method:
Place a piece of tin foil big enough to loosely wrap the salmon fillet onto a baking tray.
Put the salmon in the middle of the foil sheet.
Chop the butter into square pieces and place across the top of the salmon.
Season with salt and pepper.
Squeeze the lemon over it & then place the lemon on the tin foil to bake too.
Fold the tin foil up and over the salmon so it is completely enclosed in a loose parcel.
Bake for 15 mins or until the salmon is a pale pink colour and opaque all the way through.
Serve with veggies, potatoes or rice. Freeze any leftover salmon fillets for another day or cook them all up and eat cold with a salad tomorrow!
