Grab your housemates and cook up a storm with this amazing recipe. There are a few pans to wash-up but it’s all done before you tuck in!
1 x packet of bacon (300g)
1 x large leek
46g plain flour
200g grated cheddar cheese (or more)
Cut the bacon into strips & fry in a pan with 1tbsp of heated oil.
Chop the leek and place in a separate pan with a knob of melted butter. Heat gently until the leeks have softened.
In a different saucepan, gently melt the 45g of butter.
Once the butter has melted, add the flour and stir until a paste has formed. Cook for 2 mins.
Bit by bit, gradually mix in the milk. Continuously stir the mixture to prevent lumps from forming.
Start to cook the pasta in a large saucepan of just-boiled water.
Turn the heat up so that the milk slowly comes to the boil. The sauce will start to thicken. You can mow reduce the heat again.
Once the bacon has cooked and the leeks have softened, add them to the thickened sauce. Stir in the grated cheddar (save some to sprinkle over the top) & season with salt and pepper.
Once the pasta is cooked, drain it using a sieve and add this to the sauce.
Now place in an oven proof dish, sprinkle with the remaining cheese & bake in the oven at 180 degrees C for 20 - 25 mins.
(now all those pans can be washed up... It will all be worth it, promise!)
